Black Bean Burger (P3)
These are much better than the store-bought variety! INGREDIENTS: 4 green onions, chopped; 2 cloves garlic, minced; 3/4 cup cooked quinoa (higher in protein than rice!); 1/4 cup shredded cauliflower (the SECRET ingredient); 1 15oz can black beans, drained and rinsed; 1 egg; 1/2 cup crushed blue corn tortilla chips; 1 tsp. cumin; dash of chipotle hot sauce; dash of salt; 1/4 cup broth. DIRECTIONS: 1) in a medium saucepan over med. heat, saute the shredded cauliflower in the broth just until tender. Drain off excess broth. 2) Pour the black beans in a large bowl and mash 'em with a fork. 3) Add cauliflower to beans and then add remaining ingredients. Mix with fork until well blended. 4) Form into 6 burgers. I put mine on a wax paper-covered cookie sheet, put another piece of wax paper over them and refrigerate for at least a half hour (they hold their shape better). In the accompanying photo, I have a salad, sweet potato fries (baked!), and the burger served with chipotle ketchup. CHIPOTLE KETCHUP: 1/2 cup organic ketchup; 1/2 cup fresh (or frozen) cranberries finely chopped (I used a food processor); add chipotle hot sauce until desired heat is reached; add a dash of stevia plus. Mix in food processor or blender. I have been eating at least two vegetarian meals per week and this one is my current fave. =D
