Fruit Salsa & Cinnamon Tortilla Chip (P2)
I always use whatever fruit I have on hand (including frozen) and this dish is a fave at all potlucks. You don't even have to tell anyone it's GOOD for them! SALSA INGREDIENTS: 2 apples; 2 peaches (or use pears or oranges or some combo); 2 cups berries; 1 packet Stevia Plus; 2-3 Tbsp minced Cilantro. SALSA DIRECTIONS: 1) finely chop or mince the fruit (after coring, of course, but you can leave the peel on). Place minced fruit in a large bowl and sprinkle the stevia over the fruit. Mix with cilantro and chill for at least 30 minutes. TORTILLAS: 1 package FF or Ezekial tortillas; 1 Tbsp cinnamon; dash of SteviaPlus; EVOO spritzer. TORTILLA DIRECTIONS: 1) preheat oven 350 degrees. 2) Mix cinnamon & stevia. 3) Barely spritz tortilla with extra virgin olive oil and then sprinkle lightly with cinnamon mixture. Cut into "chips" and place on cookie sheet (don't overlap). 4) Bake chips in oven for 7-9 minutes (watch the first batch - you don't want 'em to burn and your oven temp may differ from mine). Makes about 4 cups of salsa. Servings: ah, well, you need to remember that a 6" tortilla = 1 P2 carb serving. 1 cup of the salsa would = 1 fruit. You do the math.
