Fried Rice (P1)
Ok, it's NOT fried and it's NOT RICE. SO sue me.
2 cups shredded raw cauliflower, 1 hardboiled egg (chopped), 1 green onion (chopped, 1 Tbsp each yellow and red peppers (chopped), 3 cloves garlic (minced), 1-3 Tbsp low salt broth. DIRECTIONS: 1) Spritz skillet with olive oil and sautee peppers and garlic over medium-high heat for a minute or two (just until garlic is really fragrant). Remove from skillet and set aside. 2) Spritz skillet with olive oil and turn up heat. Add cauliflower and stir briskly so it doesn't stick. Your goal is to brown it ever so slightly. When bits start to stick to the bottom of the skillet, turn heat down and add the broth (just enough so the cauliflower stops sticking but not enough to swamp things). Stir frequently until cauliflower is heated through and crisp-tender (NOT mushy!). 3) Transfer cauliflower to serving bowl and stir in peppers, onion, egg. Serve hot. Serves 2-4. P3 Version: use sesame oil for sauteing and a touch of low sodium tamari in place of broth.
